Palomino is the grape variety most commonly found in Sherry and is grown on white, chalky soils giving remarkable similarities to the soils found in Champagne, Burgundy and the Loire. Interestingly, over the last few years a number of wine writers and makers alike have recognised this and started opting to make white wines from this grape instead of fortified wines.

Hacienda La Parilla is owned by the Gonzalez brothers whose estates date back to the 1880’s. They are certified organic and also farm free ranging Black Iberian pigs! Those cured meats along with the local Manchego cheese are just perfect with this wine.
